What is Caramelization?
Caramelization is when discussing a sweet food it is the browning of sugar by oxidation under heat gives it a rich, complex, caramel or butterscotch flavor. Boiling sweet sauces or exposing them to flame can create a caramel undertone, and browning sweet vegetables like onion or corn, can add depth to their flavor. But take it too far, and it burns and can ruin food. Barbecue sauces usually develop interesting new flavors when caramelized.
